Beer Batter Fried Fish

20 Filleted or cleaned fish *
1/2 Can Stale or de-carbonated beer (your choice of brand)
1/2 Cup Milk
3 Tbls BBQ Sauce
2 Eggs
20 Ritz Crackers
1 Cup Flour
  Canola or vegetable oil to fry fish
  Salt and Pepper to taste
   
   
  Mix beer, milk, BBQ sauce, eggs, salt and pepper in mixing bowl and set aside.
   
  In a plastic zip-loc bag (large) crumble Ritz Crackers into small pieces. Use rolling pin if necessary and then add the flour.  Shake well until mixed with crackers.
   
  Wash fish fillets or cleaned fish and pat dry.  Give them a good bath in the egg mixture and place in cracker mix.  Shake well until coated.
   
  Pre-heat oil to a medium heat.  Add dusted fish and fry to golden brown.  Place in a bowl lined with paper towels to absorb oil and retain heat.
   
  * Crappies, Sunfish, Blue Gill or Perch are especially tasty.
